One of my favourite weekend treats is to do an afternoon bake after finishing all my chores. To be honest I usually stick to shortbread or chocolate cake, but this weekend I decided to go a bit different to my usual and opted for 12 Lemon cupcakes and let me tell you ... best decision ever. Wanna find out how I made them? Keep on reading! You will need: 2 Large eggs 110g or 4oz of caster sugar 110g or 4oz of self raising flour 110g or 4oz of soft butter 1 tsp of Vanilla extract Lemon juice/ extract to taste How to make them:
Butter Icing: 140g or 5oz of Butter 280g or 10oz of Icing sugar I actually used a premade butter icing because I had some left over that needed eating, but if you want to do it the proper way then you will need to beat the butter until it's nice and soft and gradually add the icing sugar until it's smooth and creamy. Then depending on perferences or what you have at hand, you can pipe the icing on in a spiralling motion from the outside into the middle, or you can spoon it on like I did and spread it out.
